2 Tbsp. olive oil
4 scallions, sliced
6 garlic cloves, diced
1 jalapeno, finely diced
1 Tbsp. ground cumin
2 cans black beans, rinsed & drained
Coarse salt and pepper
1 large sweet potato, grated
1 egg, lightly beaten
1/2 c. fresh breadcrumbs
INSTRUCTIONS:
Preheat broiler. In small skillet sautee scallions in 1 Tbsp. oil for about 1 minute. Add garlic, jalapeno and cumin and sautee another minute. Transfer to a large bowl.
Add black beans to the large bowl and mash with a potato masher. Be sure to leave some of the beans whole and in tact. Season with salt and pepper. Gently mix in grated sweet potato, egg, and breadcrumbs.
Brush a baking sheet with other tablespoon of oil. Form bean and sweet potato mixture into about 8 equal sized balls. Space evenly on baking sheet and then press with spatula to form patties. Broil until golden brown, about 10 minutes. Flip, and broil an additional 2 – 3 minutes on other side. Serve with Jalapeno Lime Sour Cream (whisk together 1/2 c. sour cream, 2 tsp. fresh lime juice, and 1 small jalapeno (minced))
Looks delicious. I only wish my picky eaters would give them a try.
