Quinoa Burgers

INGREDIENTS:

2 c. cooked quinoa

1/2 c. cottage cheese

1 medium zucchini, grated and squeezed dry

3 eggs

3 Tbsp. flour

2 green onions, chopped

1/2 tsp. suga

1/4 tsp. black pepper

1/4 tsp. cumin

1/8 tsp. salt

1/8 tsp. garlic powder

olive oil for frying

Combine cooked quinoa and all other ingredients except oil.

Heat oil in large skillet.  Reduce heat to medium.  Drop quinoa mixture by 1/4 cupfuls into oil.  Flatten to about 1/2″ think with spatula.  Cook 4 – 5 minutes per side until golden brown.  Makes about 10 burgers, depending on size and thickness.
