Potato Veggie Latkes

INGREDIENTS:real icon

2 large potatoes
2 large carrots
2 medium-size zucchini
3 eggs, beaten
1/2 tsp. salt
1/8 tsp. pepper
3/4 c. panko
Olive oil for frying

INSTRUCTIONS:

Peel the potatoes and carrots.  Grate the zucchini, potatoes, & carrots.

Mix together the grated vegetables, beaten eggs, salt, and pepper. Stir in the panko. Shape the batter into pancakes, using 1-2 tablespoons of mixture for each.

Fry the latkes, a few at a time, in 1-2 tablespoons hot oil for 3-4 minutes per side, just until golden brown. Add additional oil as necessary. Drain on paper towels. Serve hot with applesauce and sour cream.
