Ingredients:
2 Tbsp. olive oil
1 large onion, chopped
2 cloves garlic, chopped
1 14 1/2 oz. can diced tomatoes with juice
1 1/2 tsp. paprika
1 14 1/2 oz. can veggie broth
8 c. coarsely chopped kale
1 15 oz. can cannellini, drained & rinsed
Grated Parmesan
Heat the oil in a heavy large pot over medium heat. Add onion and saute until soft – about 5 min. Add garlic and stir 1 min. Add tomatoes with juices and paprika and stir 1 min. more. Add broth and kale and bring to a boil, stirring often. Reduce heat to medium-low, cover and simmer until kale is wilted & tender, about 15 minutes. Stir in beans and simmer 3 – 4 minutes until heated through. Divide among plates and top with parmesan.
