British Scones


2 c. flour

1/2 c. sugar

2 1/4 tsp. baking powder

1/2 tsp. salt

8 Tbsp. cold butter

1 tsp. finely grated lemon zest

3/4 c. milk

1 tsp. vanilla


Preheat the oven to 400 degrees.  Line a cookie sheet with parchment paper.

In the food processor, combine flour, sugar, baking powder, & salt.  Scatter the butter, cut into 10 pieces, over the flour mixture.  Pulse in processor until the butter is mixed in.

Dump flour mixture into a large bowl.  Fold in lemon zest.

Mix vanilla and milk in a small bowl.  Pour over flour mixture and gently stir until a moist dough forms.

Drop by large spoonfuls onto cookie sheet; should make about 8 equal sized scones.

Bake until puffed and golden brown – about 18 – 20 minutes.  Enjoy warm our at room temp with butter, jam, and cream.
