INGREDIENTS:
2 c. rolled oats
1/3 c. brown sugar
1 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. salt
1 c. pecans, chopped (or any other nut you like)
1 c. raspberries (or any other berry you like)
1/2 c. white chocolate chips
2 c. milk
1 large egg
3 Tbsp. butter, melted
1 Tbsp. vanilla extract
1 ripe banana, sliced
INSTRUCTIONS:
Mix oats, brown sugar, cinnamon, baking powder, salt, half of nuts, half of chocolate chips, and half of berries.
Spay a glass baking pan with non-stick spray and then spread dry oatmeal mixture in pan. Top mixture with other half of nuts, berries, chocolate chips and sliced banana.
In another bowl, whisk together egg, milk, butter, and vanilla. Pour over dry mixture.
Bake in a 375 degree oven for 35 – 40 minutes, until nicely browned. Cut into bar-sized pieces and serve hot, cold, or at room temp.
