Caribbean Spice Rubbed Salmon with Mango Salsa

1 lb. salmon filet (in one or several pieces)

1 tsp. oil

1½ tsp. cumin

½ tsp. curry

½ tsp. chili powder

½ tsp. allspice

¼ tsp. cayenne pepper

¼ tsp. cinnamon

pinch of sea salt

2 c. cooked white rice

1 12 ounce can black beans, rinsed and drained

2 mangoes, peeled and diced

½ large red onion, diced

1 bunch fresh cilantro, chopped

1 squeeze lime juice

1 avocado (optional)

Combine all spices to make spice rub in small bowl.  Combine rice and black beans in medium bowl.  Combine mango, red onion, cilantro, & lime juice in medium bowl.

Rub salmon on both sides with spice rub.

Heat oil in skillet.  Add salmon and cook 4 – 5 minutes per side until spice rub forms a nice crust, is brown, and salmon is cooked through.

In serving dishes, place rice and bean mixture, then layer salmon, and top with mango salsa.
